Saulo Jennings, a chef from Brazil’s Amazon region, had reportedly opted out of the ceremony after he was asked to make a “vegan-only menu” which led to a setback in the planning of the event. Advertisement
The 47-year-old chef, who is passionate about the rainforest’s flavours, told AFP about why he declined to cook for the Prince of Wales and 700 guests for the eco-friendly initiative programme held in Rio de Janeiro.
“The request I received was to create a 100% vegan menu, and I explained that I didn’t feel comfortable signing off on such a menu because my work is precisely to show that the Amazon is sustainable, and this includes the fish,” he explained.
He pointed out that the menu “wasn’t a requirement of the royal family” given his knowledge and revealed that he had suggested “making an Amazonian menu with mostly vegetable dishes, but also including sustainably managed fish”
Although, none of that was accepted.
When approached the Earthshot for a comment on the matter, they declined.
In his interview, chef Saulo had noted that he “greatly respects” people who have chosen to take veganism but stressed that it was not synonymous with “sustainability”.
“The forest is a balanced ecosystem, it needs people, animals and plants living together. What worries me is when this becomes a cultural imposition,” he continued. “The people of the Amazon are vegan, vegetarian and carnivorous without thinking specifically about it. We eat what the forest gives us. This relationship with food is ancestral.”
Meanwhile, Prince William has been embracing the culture of Rio as he took on the series of engagements in the last two days. He elevated the voices of the locals who have been working to uplift the communities and spotlighted the vibrancy of the South American country while introducing significant initiatives to help the ecosystems.
